Sandu’ao (三都澳) — a natural deep-water bay of 714 square kilometers that is one of the finest natural harbours in Asia — contains the Beibi Floating Village: a community of over 10,000 people living entirely on houseboats, fish farming platforms, and floating structures in the middle of the bay, with floating schools, floating temples, and floating markets serving a population that has lived on the water for generations. One of the most extraordinary human communities in Fujian Province, the Beibi floating village in the Sandu’ao deep-water bay is home to over 10,000 people who live their entire lives on houseboats, fish farming platforms, and interconnected floating structures in the middle of the bay — with floating schools, floating temples, a floating police station, and floating markets serving a population that has traditionally worked in aquaculture and fishing. Ningde prefecture contains the largest concentration of She ethnic minority people (畲族, “Shā Zú”) in China — over 180,000 She people maintain traditional villages, festivals, and cultural practices in the mountain communities of Xiapu, Fuding, and Jiaocheng counties. The She people, known as “mountain guests” (山哈), have maintained a distinctive culture of embroidered clothing, mountain song (山歌) traditions, and the Phoenix Worship (凤凰崇拜) that distinguishes their spiritual life from Han Chinese practice. Gutian Mushroom Culture (古田食用菌之乡)
Gutian County in Ningde prefecture is the single most important mushroom production center in China — and arguably in the world — producing over 70% of China’s dried shiitake (香菇), silver ear fungus (银耳), and black wood ear (黑木耳) in an industry that began with a single farmer’s experiment in the 1970s and has grown into a global supply chain serving Chinese restaurants from Tokyo to New York. The Gutian Mushroom Museum documents this extraordinary agricultural success story; the mushroom cultivation facilities and the annual autumn mushroom festival provide direct encounters with a food production tradition whose scale and global significance most visitors find genuinely surprising.

Sandu’ao Yellow Croaker (三都澳大黄鱼)
The most celebrated aquaculture product of Ningde and one of the most prized fish in Chinese seafood culture: the large yellow croaker (大黄鱼, Larimichthys crocea) farmed in the clean, protected waters of Sandu’ao bay in conditions that produce fish of exceptional quality — firm golden-skinned flesh, mild sweet flavor, and a fat content that makes it among the finest fish for steaming. The Sandu’ao yellow croaker has largely replaced the wild-caught version in Chinese markets and is considered the finest farmed large yellow croaker available; eaten steamed at a Sandu’ao bay seafood restaurant with the bay visible through the window, it is the most contextually appropriate seafood experience in Ningde.
Gutian Silver Ear Fungus (古田银耳)
The most specifically Gutian local food product and one of the most prized health foods in Chinese culinary tradition: the silver ear fungus (银耳, Tremella fuciformis) — a delicate, translucent white fungus with a gelatinous texture and a mild, slightly sweet flavor — grown on substrates in the mushroom cultivation houses of Gutian County. The most beloved preparation is the silver ear fungus sweet soup (银耳羹): silver ear fungus slow-cooked with rock sugar, jujube, and goji berries for two hours until the fungus releases its natural polysaccharides into a slightly thick, naturally sweet syrup of considerable nutritional complexity. Available at traditional dessert shops throughout Gutian and Ningde city.
Fuding White Tea (福鼎白茶)
Fuding County in Ningde prefecture is the primary production center of Chinese white tea — the most minimally processed of all Chinese tea types, produced by allowing freshly picked young buds to wither and dry naturally in the sun without cooking or rolling, preserving the natural enzymes and producing a flavor of extraordinary delicacy and freshness. The most celebrated Fuding white tea — the Silver Needle (白毫银针, Bai Hao Yin Zhen) — is made from single buds covered in fine white hair, harvested in a narrow 3–5 day window in early April, and produces a brew of pure, clean sweetness with a persistence of fragrance quite unlike any other Chinese tea. Available at specialist tea shops throughout Fuding and Ningde.
Xiapu East China Sea Seafood (霞浦海鲜)
Xiapu County in Ningde prefecture has some of the most productive coastal fishing grounds in northeastern Fujian, with the tidal mudflat landscape that has made Xiapu famous among Chinese photographers also producing abundant seafood: large abalone from the rocky reefs, sea urchin from the offshore grounds, and the fresh fish from the East China Sea fleet that arrives at the Xiapu fish market each dawn in conditions of exceptional freshness.
