The Shuanggou baijiu (双沟大曲) was one of China’s eight most celebrated spirits in the Mao era and remains a quality product of the strong-aroma (浓香) style. Available at lakeside restaurants throughout the Luoma Lake area; the mandarin fish (鳜鱼) version, available in autumn, is the finest.
Suqian Braised Dog Meat (沭阳狗肉)
One of the most specifically local and most polarizing traditional foods in northern Jiangsu: dog meat braised in a sauce of soy, baijiu, dried chili, and five-spice for three to four hours until the meat becomes tender and the sauce achieves the dark, complex richness that northern Jiangsu braising traditions produce from long cooking. The tradition of dog meat consumption in Suqian and the surrounding Shuyang and Siyang counties reflects the northern culinary influence on this part of Jiangsu, where the food culture aligns more closely with Shandong and Henan than with the rice-and-fish cuisine of the south.
