Why Visit Quzhou?

Quzhou is one of western Zhejiang’s most culturally profound cities — a place where three of the most intellectually significant heritage sites in the province exist within a single prefecture: the Longyou Caverns, the Jianglang Mountain UNESCO Geopark, and the Confucius Southern Family Mansion. Each represents a different dimension of Chinese civilization’s depth — the geological and archaeological mystery of the caverns, the geological drama of the mountain, and the Confucian cultural continuity of the mansion — and together they create a heritage experience of unusual completeness.

The Longyou Caverns (龙游石窟) are one of the most mysterious archaeological discoveries in China: 24 enormous hand-carved underground chambers discovered in 1992 beneath a pond in Longyou County, covering 30,000 square meters in total, carved entirely by hand from soft sandstone in a consistent fish-scale pattern — yet appearing in no historical records and attributed to no known civilization. The caverns’ walls, ceilings, and supporting columns are decorated with the same meticulous diagonal chisel marks throughout, suggesting a systematic construction project of enormous scope, yet who built them, when, and why remains entirely unknown.

Jianglang Mountain in Jiangshan County — three vertical granite pillars rising 816 meters from the surrounding plain — is a UNESCO World Natural Heritage Site (inscribed as part of the “Danxia Landform” series in 2010) and one of the most visually dramatic geological formations in Zhejiang Province. The three pillars, named the Lang, Ya, and Ling peaks, rise so steeply from the valley floor that the topmost platforms are accessible only by cable car, and the views from the summit across the Jiangshan plain and toward the Fujian border mountains are among the finest panoramas in western Zhejiang.

China’s Greatest Archaeological Mystery

Longyou Caverns (龙游石窟)

One of the most mysterious archaeological sites in China, the Longyou Caverns are 24 enormous hand-carved underground chambers discovered in 1992 beneath a pond in Longyou County — covering 30,000 square meters in total volume, each chamber soaring 30 meters high and supported by massive carved columns. Every surface — walls, ceilings, columns — is covered in the same meticulous diagonal fish-scale chisel pattern, applied with extraordinary consistency throughout the entire complex. No historical records mention their construction; no artifacts have been found inside; no civilization has been identified as their builder. The caverns predate the earliest reliable historical records for the region, and the mystery of who carved them, when, and for what purpose remains entirely unresolved — making them the most intellectually compelling heritage site in western Zhejiang.

Jianglang Mountain (江郎山)

A UNESCO World Natural Heritage Site inscribed as part of the global Danxia Landform series in 2010, Jianglang Mountain presents three vertical granite pillars — the Lang, Ya, and Ling peaks — rising 816 meters from the surrounding Jiangshan plain in formations of extraordinary abruptness. The pillars’ sheer faces, rising nearly 400 meters from their bases, create one of the most dramatic vertical landscapes in Zhejiang Province; cable cars access the summit plateau between the pillars, where hiking trails connect viewpoints of the surrounding mountains and plain. The mountain is particularly spectacular at dawn (when the pillars catch the first light before the valley below) and after rain (when mist clings to the cliff faces).

Confucian Heritage

Confucius Southern Family Mansion (孔氏南宗家庙)

When the Song Dynasty court fled south to Lin’an (Hangzhou) in 1127, a branch of the Kong family — direct descendants of Confucius — relocated to Quzhou, establishing what became known as the “Southern Branch” of the Confucius family. For nearly 800 years, the Southern Branch has maintained the Confucian rites, the ancestral ceremonies, and the Kong family traditions in Quzhou while the primary branch remained in Qufu, Shandong. The Kong Family Temple in Quzhou — the Nan Zong (Southern Sect) of Confucianism — is one of only two places in China where the authentic Confucian ancestral ceremonies have been performed in unbroken continuity for centuries, and the complex of halls, gates, and gardens preserves Song Dynasty Confucian architecture of considerable significance.

Ancient City Heritage

Kecheng Ancient City (柯城古城区)

Quzhou’s historic city center preserves a compact but well-maintained collection of traditional architecture from the Ming and Qing Dynasties — the remnants of a prosperous market town that controlled the western Zhejiang trade routes between the Yangtze Delta and Fujian Province. The Tianwang Tower, the historic street of Shui’an Lane, and the city’s surviving section of ancient walls provide a pleasant urban heritage walk of modest scale and genuine historical character. The Quzhou Museum, housed in a former Confucian school, presents the city’s cultural history with particular depth, including exhibits on the Longyou Caverns’ ongoing archaeological investigation.

Quzhou Food You Should Try

Quzhou smelly tofu deep fried fermented tofu western Zhejiang street food local cuisine

Quzhou Smelly Tofu (衢州臭豆腐)

The most beloved street food in Quzhou and a fermented tofu tradition with a distinctively western Zhejiang character: firm tofu fermented in a brine of herbs, amaranth stalks, and salt for weeks until the exterior develops its characteristic deep pungency, then deep-fried in clean oil until the surface blisters and crisps while the interior remains silky and mild. The Quzhou smelly tofu is typically larger and more irregularly shaped than the Changsha or Nanjing versions, and the fermentation brine produces a slightly more complex and more herbal aroma. Eaten hot from the frying pan with chili sauce and pickled vegetables at a street stall — the most essentially Quzhou street food experience available.

Quzhou spicy rabbit head local Zhejiang braised rabbit chili snack street food specialty

Quzhou Spicy Rabbit Head (衢州兔头)

One of the most specifically local foods in Quzhou and one of the most enthusiastically debated in Zhejiang — the Quzhou rabbit head (兔头) is braised whole in a complex sauce of Sichuan pepper, dried chili, star anise, soy, and sugar until the meat becomes tender and the gelatinous skin absorbs the spice blend into a glistening, fiery coating. Eaten by breaking the skull and picking the small amounts of cheek meat, brain, and tongue with fingers and chopsticks in a process that locals describe as meditative and that visitors find initially challenging but rapidly compelling. Available at specialist rabbit head restaurants throughout the city from afternoon until late evening.

Jiangshan Quzhou pear white pear fruit Zhejiang local produce Jiangshan Bai Li specialty

Jiangshan White Pear (江山白梨)

Jiangshan County in southern Quzhou produces white pears of exceptional quality — thin-skinned, abundantly juicy, and with a sweetness of considerable refinement that reflects the mountain soil and the clean Jiangshan River water used for irrigation. The Jiangshan white pear is one of the premium fruit products of western Zhejiang, sold at specialist stalls throughout the prefecture in late summer and autumn and used in local cooking as a natural sweetener for braised pork and poultry. Eating a fresh-picked Jiangshan white pear at a roadside stall in August — the juice running down the chin, the flesh cool and sweet — is one of those seasonal pleasures that no preservation or refrigeration can replicate.

Quzhou rice cake glutinous mochi local Zhejiang traditional food sweet sticky snack

Quzhou Rice Cake (衢州麻糍)

The traditional festival food of western Zhejiang and a glutinous rice confection of considerable depth: cooked glutinous rice pounded in a stone mortar until it becomes a smooth, elastic dough, then shaped into rounds and coated in toasted sesame seeds and brown sugar — or filled with red bean paste and sesame in the stuffed version. The Quzhou mashu differs from similar preparations in other Zhejiang regions in the specific ratio of sesame to sugar used in the coating and the particular elasticity of the pounding technique, which produces a chewiness quite different from baked or steamed glutinous rice products. Available at traditional food stalls and specialty shops throughout the prefecture, particularly during festivals and in the autumn harvest season.
